Tonights Supper: Chicken Pasta Salad

Chicken Pasta Salad
1 lb pasta, cooked according to package
2 chicken breast, poached and diced
1 bag frozen peas, thawed
1 T honey mustard
1/3 c. oil
2/3 c. vinegar
1 small diced onion
Cook pasta and rinse under cool water. Place in a large bowl. Add cooked chicken, onion and thawed peas. Place the mustard, oil and vinegar in a mason jar with lid. Shake well. Just before serving, pour on enough dressing to toss to coat. This is really good cold or room temp. This is really great picnic food. Tonight I am serving it with a green salad.

  1. I thought I had peas, and I didn't! So I ran out to the garden and picked some broccoli, chopped it up and added it raw. It was really good like that too!
